PEMANFAATAN LIMBAH KENTOS MENJADI FRIED COCONUT SPROUT

Kentos adalah bagian dari kelapa yang terdapat di dalam buah sudah tua. ini merupakan cikal bakal tunas seringkali hanya terbuang sebagai limbah. Pada penelitian ini, kentos dimanfaatkan menjadi cemilan bernama fried coconut sprout. Tujuan menjadikan limbah makanan disukai oleh semua lapisan masyarakat. Hasil menunjukkan bahwa sprout dihasilkan panelis secara organoleptik, yaitu segi rasa, warna, aroma, dan tekstur. Perlakuan lebih perlakuan dengan penambahan NaHCO3. Berdasarakan uji t, ada perbedaan signifikan antara tanpa NaHCO3 rasa Namun warna hasilnya tidak nyata.
